Ingredients

1 cup bean sprouts
1 cup peanuts, shelled, boiled
1 large onion finely chopped
1 tomato finely chopped
1 cup soft tofu or paneer (Cottage Cheese) diced
1 tbsp. Coriander leaves finely chopped
1/2 bunch fresh fenugreek leaves (no stalks), chopped
1/2 lemon juice extracted
1 tsp. Sugar ground
1/2 tsp. Cumin seeds crushed
1/2 tsp. Chat masala
1/2 tsp. Red chilli powder

MIXED VEGETABLES LAYERED RICE


Ingredients

2 cups rice basmati
2 cups mixed vegetables sliced flat and broad as per vegetables
(potato, onion, zucchini, ridge gourd, bottle gourd, french beans,
carrots, cauliflower or capsicum as per choice)
1 tomato chopped
2 tbsp ghee
1/2 tsp dalchini (cinnamon) - lavang (clove) powder
1/2 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp dhania powder
salt to taste
lemon juice to taste
1/2 tsp ginger-garlic grated or paste
2 tbsp curds
1 tsp mixed cummin & mustard seeds

1/2 tsp. garam masala

2 chopped onions
2 potatoes
2 tomatoes
2 tablespoons dhana-jira powder
2 tablespoons chilli powder

A pinch of Heeng ( a MUST)

1/2 tsp.turmeric

ONION-TOMATO MASALA GRAVY

Onion tomato form a basic gravy. You can add Lady's Finger, boiled Baby potatoes etc and make a tasty vegetable. This gravy can also be stored in refrigerator for further use.

Serves 4
4 large sized Onions (chopped)
2 large sized Tomatoes (chopped)
1 cup Fresh tomato puree
3 tbsps Oil
1/2 tsp Cumin seeds
1 tsp Garlic paste
1 tsp Ginger paste
1/4 tsp Turmeric powder
Salt to taste
1 tsp Red chilli powder
1 1/2 tsps Coriander powder
1 tsp Garam masala powder

WHITE GRAVY

This is most basic gravy for many indian dishes, you can just add up vegetables in this gravy such as baby corns, mexican corns, pieces of carrots, peas and capsicum just about anything. You can store this gravy for 3-4 days in refrigerator. Ingredients

4 large sized Onions (quartered)
1 cup Cashewnuts
2 tbsp Oil
1 tbsp Garlic paste
1 tbsp Ginger paste
2 Green cardamoms
2 Green chillies (slit)
1/4 cup Mawa/khoya (grated)

MAKHANI GRAVY

Makhani Gravy is sweet and sour gravy for many indian vegetables. This gravy is commonly used for Paneer(Cottage cheese) Makhani, Butter Chicken etc. but you can also add vegetables of your choice in this and it tastes great.

3 carrots, sliced obliquely, into ovals
1 sprig spring onions with greens,
finely chopped

4-5 tender lemon grass stems finely chopped

1 tbsp. coriander chopped finely

For topping:

4-5 basil leaves, chopped

FRUIT ICECREAM MEDLEY

Ingredients

2 scoops basic vanilla icecream
1/2 cup mixed chop fruit
(orange, strawberry, banana, grapes, chickoo, kiwi, etc)
2 tbsp. fresh fruit sauce
1 icecream wafer for topping
1 tbsp. tiny cubes of leftover cake (optional)
2-3 tbsp. orange juice sweetened and chillled
